Banana Oats Raisin Muffins


I am pretty sure that every once in a while, you have overripe bananas on your kitchen counter. Hats off to you if you don't, but clearly that's not the case with me. Whenever that happens to me, I think of a few options that I can use the bananas for - banana bread, banana smoothie, sometimes I also cut and freeze the bananas for making a smoothie later. 
Last weekend when this happened, I thought of preparing banana muffins. This was to make sure we can use these masterpieces for snacking during the school holidays. My daughter is not a fan of raisins as such but does not mind having them. To make it healthy, I have added steel cut oats to the recipe. You can replace it with all-purpose flour instead if you wish to. 

Ingredients:
- Overripe Bananas - 2
- Sugar - 1/2 cup
- Cinnamon powder - 1 tsp
- Self Raising whole wheat flour - 1/2 cup
- Steel cut oats - 1 and 1/2 cups
- Vanilla essence - 1 tsp
- Milk - 1/2 cup
- Olive oil - 1/4 cup
- Eggs - 2
- Baking powder - 1 tsp
- Raisins - 1/2 cup


Method:
- Mash the bananas with a fork in a bowl.
- In another bowl, beat all the wet ingredients (oil, milk, eggs, sugar, vanilla essence) together.
- To this mixture, the add mashed bananas and mix well.
- Add the flour, baking powder, raisins and oats and mix well.
- Line a muffin tray with muffin cases and preheat oven to 170 degrees celcius.
- Once the oven is preheated, bake muffins for 20 mins.
- Let it cool before serving.

Orange Cake

 


Sticking to the ritual of baking cakes every weekend for snacking over the week ahead. This time there were loads of oranges in the fruit tray and hence Orange Cake it was!

Ingredients:
- Sugar - 1/4 cup
- Olive oil - 1/2 cup
- Whole meal Self Raising Flour - 1 cup
- Vanilla essence - 1 tsp
- Eggs - 2
- Juice of 1 orange
- Grated orange rind - 2 medium sized oranges


Method:
- In a bowl add the oil, sugar and eggs and mix well.
- To this add the flour and fold it all in together.
- When mixed well, add vanilla essence, orange rind and orange juice. Mix everything together.
- Preheat oven to 165 degrees celcius (temperature may vary based on your oven).
- Line a baking tray and add the batter.
- When oven is preheated, put the tray in (middle shelf) and bake for 30 mins.
- Let it cool and snack for the week is ready.

Blueberry Chia seeds coconut cake




How about a healthy cake recipe? According to me all homemade cakes are healthy! Having these in the pantry helps when the 3pm snack timer goes off in your brain. Its better to have this than having a few store bought cookies or fried snacks.

Ingredients:
- Self Raising Flour - 1 cup
- Oil (Veg/Canola/Olive) I used vegetable oil, but its up to your choice and pantry - 1/2 cup
- Sugar - 1/2 cup
- Vanilla Essence - 1 tsp
- Chia seeds - 2 tbsp 
- Blueberries - 100 gm
- Coconut flakes - 1/4 cup
- Eggs - 2
- Milk - 3 tsp

 Method:
- Preheat oven to 160 degrees Celsius.
- Line a cake tin with butter paper and keep it ready.
- Crack 2 eggs in a big mixing bowl.
- Add sugar and beat with a spoon until there are no granules and sugar is mixed well with the eggs.
- Add oil and mix well until everything is mixed and forms a batter.
- To this add half the flour and fold it in.
- Add the next half and fold it in too.  
- Add in and mix vanilla essence and milk at this time to get the right consistency.
- Mix in blueberries, coconut flakes and chia seeds. Keep some aside to sprinkle on top
- Pour this mixture into the cake tin evenly. Sprinkle the extras from top, the ones we kept aside in the previous step.
- Once the oven is preheated, put the cake on the middle rack and bake for 30 min.
- Do the toothpick test, if not completely baked, bake for another 5 mins. Baking time will vary based on the strength and design of your oven.
- Once baked, take out of the oven and let it cool.
- Cut and serve.

Coconut Choc Chip Cake




Coconut is the flavour of the season for me! I am from a tropical country and coconut finds its place a lot in Bengali cuisine. Be it curries, desserts or snacks coconut always finds a place in my kitchen.


Ingredients:
- Self Raising Flour - 1 cup
- Oil (Veg/Canola/Olive) I used vegetable oil, but its up to your choice and pantry - 1/2 cup
- Sugar - 1/2 cup
- Vanilla Essence - 1 tsp
- Chocolate chips - 2 tbsp
- Coconut flakes - 4 tbsp and extra for sprinkling on top
- Eggs - 2
- Milk - 3 tsp





 Method:
- Preheat oven to 160 degrees Celsius.
- Line a cake tin with butter paper and keep it ready.

Blueberry Choco chip and Coconut Cake




Our family loves cake as afternoon snack and lunch box treat. The daughter does not like blueberries, she eats them only if they are in a dessert or in cake. We have also been watching Is it Cake? on Netflix these days so this snack fits in perfectly for this work week. 

Ingredients:
- Self Raising Flour - 1 cup
- Oil (Veg/Canola/Olive) I used vegetable oil, but its up to your choice and pantry - 1/2 cup
- Sugar - 1/2 cup
- Vanilla Essence - 1 tsp
- Chocolate chips - 2 tbsp 
- Coconut flakes - 4 tbsp and extra for sprinkling on top
- Eggs - 2

- Fresh Blueberries- 100gm

Chocolate Coconut Cake



In all these years of cooking and baking, if there is one thing I have mastered it has to be cake. It is our (me and my daughter) favourite pastime during the weekends. I bake a cake each week. It could be any type based on the mood and the princess's choice. This goes into lunchbox during the week and is also used as our afternoon snack.



Ingredients:
- Self Raising Flour - 1 cup
- Oil (Veg/Canola/Olive) I used olive oil, but its up to your choice and pantry - 1/2 cup
- Sugar - 1/2 cup
- Vanilla Essence - 1 tsp
- White chocolate chips - 2 tbsp (I did not have chip so chopped up a white choc bar)
- Moist Coconut flakes - 4 tbsp
- Chia seeds - 2 tsp
- Eggs - 2
- Milk - 3 tsp
- Cocoa powder - 2 tbsp

Method:
- Preheat oven to 160 degrees Celsius.
- Line a cake tin with butter paper and keep it ready.
- Crack 2 eggs in a big mixing bowl.
- Add sugar and beat with a spoon until there are no granules and sugar is mixed well with the eggs.
- Add oil and mix well until everything is mixed and forms a batter.
- To this add half the flour and fold it in.
- Add the next half and fold it in too. Do not mix too much else end result might be a crispy cake 😆. 
- Now add cocoa powder and fold that in too. Make sure there are no white spots left else you might end up with a marble cake .
- Add in and mix vanilla essence and milk at this time to get the right consistency.
- Mix in coconut flakes, chia seeds and white chocolate.
- Pour this mixture into the cake tin evenly.
- Once the oven is preheated, put the cake on the middle rack and bake for 20 min.
- Do the toothpick test, if not completely baked, bake for another 5 mins. Baking time will vary based on the strength and design of your oven.
- Once baked, take out of the oven and let it cool.
- Cut and serve. 

Note:
- This cake can also be used as a base for birthday cakes.
- Can be stored in an airtight box in the pantry for a week (does not last that long at my place 😉)

Tea Time Cake



I have lots of childhood memories attached with this cake. This is the cake my Ma always used to make. I used to take it to school for my tiffin break and all my friends would be so eager to have at least a bite of it. She also made this cake once on my birthday and she had decorated it with cream. That was the best cake I've tasted in life till now. Those days bakeries were not as many as there are today and since I have spent my childhood in a small town there were none. So on my birthdays most of the times this was the cake that I used to cut. When I asked Ma about the recipe she was also recollecting all the memories that she had of my childhood related to this cake. I had tried this cake for the first time when I was in college and I forgot to put baking powder. Then when I saw that the cake was not rising I increased the time and temperature. My brother still tells me about that disaster as you can see in the previous post. It looked as if there has been an earthquake on the cake. Thankfully I don't do all such kind of stuff now. I had made this cake last week. It was awesome. I called up Ma and told her that it was exactly like what she used to prepare. So now to the recipe:

Ingredients:
-All purpose Flour / Maida (1 cup)
- Sugar (1 cup)
- Eggs (2)
- Vanilla essence (1/2 tsp)
- Cashews (10-12)
- Raisins (a handful)
- White oil (1/2 cup)
- Butter (1 tsp for spreading on cake tin)
- Milk (1/2 cup)
- Baking Powder (1 tsp)


Preparation:
- Beat the eggs, vanilla essence, oil, milk and sugar well.I generally give it a quick whirl in the mixer. You can also use a hand mixer or do beat it well with a spatula.
- Sift the flour and baking powder together.
- Fold in the dry ingredients into the wet ingredientsa and beat well.
- The flour should be nicely folded into the wet mixture (You are looking into for a consistency which lets you form ribbons when you drop it from the spoon).
- On your cake tin apply butter so that the cake does not stick to the tin.
- Pour your batter into the cake tin.
- Preheat oven to 200 degrees celcius and put the cake into oven in baking mode for 20-25 mins.
- To check if the cake is ready insert a toothpick into the cake and it should come out clean.

My First try at Baking


Baking is something that always fascinated me but I could not bake as I did not have an oven in my kitchen. Few days back on our marriage anniversary my husband gifted me an oven (he does good things some times). Frankly speaking it was really sweet of him. This is something that I had always wanted and since our new oven got a place in my kitchen I have been doing a hell lot of baking, grilling etc etc... These days most of our dinners are baked :). I have been making full use of my oven and I am really really happy about it.

Cooking is an art but baking is definitely a science. In baking you have to add exact amounts of ingredients and at the right temperature. That is when all the ingredients start the chemical reactions like in a chemistry lab (i know i exaggerated it!!!) and you get a perfectly baked dish. If anything goes wrong between your quantity of ingredients, temperature of the oven and the ingredients as well and the time for which you are baking it your dish is surely going to find its way to the dustbin.

This particular chocolate cake is the first thing that I tried in my oven. It was more for testing purpose. I wanted to check whether my oven is working fine and what are the features that it has. So I bought cake mix and baked one delicious cake. The cake was very soft and moist.

Ingredients:
- Cake Mix (1 packet - I used Pillsbury chocolate cake mix)
- Oil (1/2 cup)
- Eggs (2)
- Cashews (6-7)




Method:
- Mix oil and eggs together.
- Fold in the cake mix.
- Put batter in cake tin and add cashews on top.
- Preheat oven to 170 degrees Celcius for 10 mins.
- Bake the cake for 20 mins at 170 degrees celcius.

Your cake is ready.
